Tanzanian Dry Goat Fry — goat pieces boiled until tender then dry-fried with chilli, garlic, and spices until completely caramelised and crispy on the outside. The bar snack and nyama choma accompaniment that Tanzania cannot stop eating.
Dry goat fry is the addictive bar snack of Tanzania — goat pieces that are boiled until falling-tender, then fried until the exterior is completely caramelised and slightly crispy. Served with cold drinks, it disappears as fast as it arrives.
Ingredients
Equipment: Large pot, Wide dry frying pan
- 800g goat pieces — bone-in
Boil
- 1 onion
- 1 tsp salt
- 1 tsp pepper
Dry fry
- 3 tbsp oil
- 4 garlic cloves — minced
- 2 green chillies — sliced
- 1 tsp cumin
- 1 tsp chilli powder
- 2 tsp salt
- ¼ cup coriander
Method
- Boil goat with onion, salt, and pepper for 50 minutes until very tender.
- Drain. Pat pieces very dry.
- Heat oil in wide pan over very high heat.
- Add goat. Do not stir for 3—4 minutes — allow to caramelise.
- Add garlic, chillies, and spices. Toss.
- Continue frying for 6—8 minutes until completely caramelised and slightly crispy.
- Scatter coriander. Serve immediately.
Chef Tips
- Patting the boiled goat dry is essential — moisture prevents caramelisation.
- Very high heat for the fry — do not lower.
- Do not stir immediately — let the crust form.
Common Mistakes to Avoid
- Wet goat — steams instead of crisps.
- Moving too early.
The Science
Moisture on the surface of boiled goat creates steam, preventing Maillard browning. Patting dry removes this moisture barrier, allowing immediate high-temperature caramelisation on contact with the hot pan.
