Ingredients

Equipment: Large heavy pot with lid

  • 1 kg oxtail — jointed
  • 2 onions — diced
  • 4 tomatoes — diced
  • 5 garlic cloves
  • 2 tbsp ginger
  • 3 tbsp oil
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tsp turmeric
  • 1 tsp paprika
  • 2 tsp salt
  • 3 cups water

Method

  1. Brown oxtail pieces well. Remove.
  2. Cook onions deeply golden.
  3. Add garlic, ginger, all spices, tomatoes. Cook 10 minutes until very thick.
  4. Return oxtail. Add water.
  5. Simmer covered on the lowest heat for 2—2.5 hours until meat falls from bone.
  6. The sauce will be very thick and glossy.
  7. Adjust seasoning. Scatter coriander.
