Beef stir fry is the dish that Dar es Salaam's quick-service restaurants do best — thin beef strips at screaming-hot heat, a few vegetables, and a bold quick sauce. In and out of the pan in 15 minutes but with flavour that takes much longer to build in a slow dish.

Ingredients

Equipment: Wok or large wide pan

  • 500g beef sirloin — thinly sliced
  • 1 red pepper — sliced
  • 1 green pepper — sliced
  • 1 carrot — julienned
  • 2 onions — sliced
  • 3 garlic cloves
  • 1 tbsp ginger
  • 3 tbsp oil
  • 1 tsp soy sauce
  • 1 tsp oyster sauce
  • 1 tsp cumin
  • 1 tsp paprika
  • 2 tsp salt

Method

  1. Heat wok to smoking over highest heat.
  2. Add oil. Sear beef in two batches — 1.5—2 minutes. Remove.
  3. Stir-fry onions and garlic 1 minute.
  4. Add carrots and peppers. Stir-fry 2 minutes.
  5. Return beef. Add ginger, soy, oyster sauce, cumin, paprika.
  6. Toss everything together on high heat for 2 minutes.
  7. Serve immediately.

  • Small batches for beef — crowding produces steaming.
