Tanzanian Grilled Tilapia — fresh whole tilapia scored and seasoned with lemon, garlic, and spices, grilled over charcoal until the skin is crispy and the flesh is moist and flaky. The fish dish of Lake Victoria — Tanzania's most eaten freshwater fish.
Tilapia (sato) is the fish of Lake Victoria and inland Tanzania — abundant, affordable, and extraordinarily versatile. Grilled with the simplest seasoning, it is the lakeside fish dish that millions of Tanzanians eat weekly.
Ingredients
Equipment: Charcoal grill, Fish grill basket
- 4 whole tilapia (400—500g each) — scaled and gutted
- 4 garlic cloves — minced
- 2 tbsp lemon juice
- 1 tbsp oil
- 1 tsp turmeric
- 1 tsp paprika
- 1 tsp cumin
- 2 tsp salt
Method
- Score fish 4—5 times on each side through to the bone.
- Mix marinade. Rub all over fish and into scores. Marinate 30 minutes.
- Grill over medium-high coals for 8—10 minutes per side.
- Do not move until skin releases cleanly.
- Serve with coriander and lemon.
