Mchuzi wa Samaki is the inland version of Tanzanian fish stew — lighter and sharper than the coconut milk version. The fish curry served at every mama lishe in Dar es Salaam, with ugali.

Ingredients

Equipment: Wide pan with lid

  • 800g firm fish — tilapia, snapper, or catfish
  • 2 large onions — diced
  • 4 medium tomatoes — diced
  • 4 garlic cloves — minced
  • 1 tbsp ginger
  • 2 green chillies
  • 2 tbsp oil
  • 1 tsp curry powder
  • 1 tsp turmeric
  • 1 tsp paprika
  • ½ tsp cumin
  • 2 tsp salt
  • ½ cup water
  • ¼ cup fresh coriander
  • 1 tbsp lemon juice

Method

  1. Season fish with salt and turmeric.
  2. Cook onions until golden. Add garlic, ginger, chillies, spices.
  3. Add tomatoes. Cook until completely broken down — 8 minutes.
  4. Add water. Simmer. Add fish. Cover and simmer gently 10—12 minutes.
  5. Add lemon and coriander.

  • Firm fish only.
  • Tomato base must be fully reduced before adding fish.

  • Soft fish.
