The Swahili seafood platter is what the Indian Ocean has to offer — all of it, simultaneously. The skill is in the timing: each seafood has different cooking requirements. At Zanzibar's finest restaurants this platter arrives to silence — followed immediately by conversation about nothing else.

Ingredients

Equipment: Charcoal grill, Two pans, Large serving platter

  • 1 whole snapper (600g) — for grilling
  • 200g large prawns — for coconut sauté
  • 300g cleaned octopus — for curry
  • 200g calamari rings
  • 200g fresh mussels — cleaned
  • Coconut rice, kachumbari, coconut chutney, pili pili
  • Fresh lemon and coriander

Method

  1. Prepare coconut rice and octopus curry in advance.
  2. Begin grilling fish 20 minutes before service — basting every 3 minutes.
  3. Cook calamari in a hot pan 2—3 minutes only.
  4. Cook prawns in garlic coconut butter 4 minutes.
  5. Steam mussels 4—5 minutes until opened.
  6. Assemble platter: rice at one end, fish centre, prawns, calamari, mussels, octopus in sections.
  7. Scatter coriander. Arrange sauces in small bowls.

Chef Tips

  • Stage cooking carefully — octopus and rice done ahead.
  • Calamari is 2 minutes maximum.
  • Arrange by colour for visual impact.
