Zanzibar oysters collected from tidal rocks by local women and sold at the waterfront markets — extraordinary quality, briny, sweet, and deeply of the Indian Ocean. Eaten raw at the water's edge with lemon and pili pili.
Ingredients
Equipment: Oyster knife, Thick cloth or glove, Crushed ice platter
- 24 fresh live oysters
Ginger-Lime Dressing
- 2 tbsp lime juice
- 1 tsp fresh ginger — grated
- 1 tsp honey
- Pinch of salt
- Pili pili sauce on the side
- Crushed ice for serving
Method
- Keep oysters alive and cold until serving.
- Make ginger-lime dressing: combine lime, ginger, honey, and salt.
- Prepare a large platter of crushed ice.
- Shuck oysters: hold with cloth. Insert knife at hinge. Twist. Pop lid. Slide knife under to cut muscle.
- Place on crushed ice cup-side down.
- Add a few drops of dressing to each.
- Serve with pili pili on the side.

- Oysters must be alive — discard any already open.
- The liquor inside is the most flavourful part — do not lose it.
- A thick cloth prevents injury.
