🐟 Tanzanian Grilled Sea Bass

Tanzanian Grilled Sea Bass — Indian Ocean sea bass fillets pan-seared skin-crispy with a Zanzibar spice crust, served with a passion fruit-coconut beurre blanc. Zanzibar's most elegant restaurant fish.
Indian Ocean sea bass is among the finest fish in the world — firm, white, and clean-flavoured. When cooked correctly (skin side down, high heat, patience) it produces a magnificently crispy skin. The passion fruit beurre blanc is uniquely Tanzanian.
Ingredients
Equipment: Non-stick or cast iron pan, Small saucepan for sauce
- 2 sea bass fillets (200g each) — skin on
- 1 tsp Zanzibar spice blend (cumin, coriander, cardamom, cloves — ground)
- 1 tsp salt
- 2 tbsp vegetable oil
Passion Fruit-Coconut Beurre Blanc
- 3 passion fruits — juice
- 50ml coconut cream
- 1 shallot — minced
- 100g cold butter — cubed
- 1 tsp honey
- Salt to taste
Method
- Make beurre blanc: reduce passion fruit, coconut cream, and shallot by two-thirds. Remove from heat. Whisk in cold butter piece by piece. Add honey. Season.
- Pat fish skin completely dry. Season with spice blend and salt.
- Heat oil until shimmering. Place fish skin-side down.
- Press lightly for 30 seconds. Cook without moving 4—5 minutes until golden and crispy.
- Flip. Cook 2—3 minutes on flesh side. Rest 2 minutes.
- Serve with beurre blanc.
Chef Tips
- Completely dry skin is non-negotiable.
- Press gently then do not touch until ready to flip.
- Beurre blanc must be made off direct heat.

- Moving fish before skin crisps.
- Beurre blanc over direct heat — breaks.
