Ingredients

Equipment: Large pot

  • 400g dried kidney or red beans — soaked overnight
  • 400ml thick coconut milk
  • 2 large onions — diced
  • 4 medium tomatoes — diced
  • 4 garlic cloves — minced
  • 1 tbsp ginger — grated
  • 3 tbsp vegetable oil
  • 1 tsp curry powder
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 tsp paprika
  • 2 tsp salt
  • ¼ cup fresh coriander

Method

  1. Cook soaked beans in fresh water for 60—75 minutes until completely tender. Reserve 1 cup cooking liquid.
  2. Heat oil. Cook onions until deeply golden — 10 minutes.
  3. Add garlic, ginger, and all spices. Stir 1 minute.
  4. Add tomatoes. Cook 8 minutes until very thick.
  5. Add cooked beans and reserved liquid.
  6. Simmer 15 minutes until sauce coats the beans.
  7. Add coconut milk. Simmer gently 10 minutes.
  8. Garnish with coriander.
