Maharage ya Mchuzi (without coconut milk) is Tanzania's everyday bean stew — the tomato-based version eaten from Dodoma to Mwanza, from Arusha to Dar es Salaam. Cheaper than the coconut version and equally nourishing, it is the protein that sustains most of Tanzania daily.

Ingredients

Equipment: Large pot

  • 400g dried kidney or borlotti beans — soaked overnight
  • 2 large onions — diced
  • 4 medium tomatoes — diced
  • 4 garlic cloves — minced
  • 1 tbsp ginger
  • 2 tbsp vegetable oil
  • 1 tbsp tomato paste
  • 1 tsp curry powder
  • 1 tsp cumin
  • 1 tsp paprika
  • 2 tsp salt
  • ¼ cup fresh coriander

Method

  1. Cook soaked beans in fresh water 60—75 minutes until tender. Reserve 1 cup liquid.
  2. Heat oil. Cook onions until golden.
  3. Add garlic, ginger, tomato paste, spices. Stir 1 minute.
  4. Add tomatoes. Cook 8 minutes until thick.
  5. Add beans and reserved liquid.
  6. Simmer 20 minutes until thick and richly flavoured.
  7. Garnish with coriander.
