Mchicha (amaranth) is Tanzania's most important leafy vegetable — more nutritious than spinach, incredibly fast to cook, and available at every market. It is the green that accompanies ugali at the majority of Tanzanian family meals. Its preparation is simple but the result is deeply satisfying.

Ingredients

Equipment: Large wide pan

  • 500g fresh mchicha (amaranth leaves) — washed and roughly chopped
  • 2 medium onions — diced
  • 3 medium tomatoes — diced
  • 3 garlic cloves — minced
  • 2 tbsp vegetable oil
  • 1 tsp curry powder
  • 1 tsp salt
  • ¼ tsp black pepper

Method

  1. Heat oil over medium heat.
  2. Cook onions until golden — 6 minutes.
  3. Add garlic and curry powder. Stir 30 seconds.
  4. Add tomatoes. Cook 5 minutes until softened.
  5. Add mchicha. Stir to combine.
  6. Cover and cook 4—5 minutes until completely wilted.
  7. Season with salt and pepper. Serve immediately.
