🎃 Tanzanian Pumpkin Leaves
Majani ya Maboga
Tanzanian Majani ya Maboga — young pumpkin leaves and vine tips sautéed with onions and garlic. Another of Tanzania's zero-waste vegetables — the same plant provides pumpkin fruit, seeds, and tender edible leaves.
Pumpkin leaves are among the most widely used vegetables in Tanzania — harvested from the same plants that produce pumpkins for soup and seeds for snacking. The young leaves and tender vine tips are mild, slightly earthy, and cook beautifully in a simple onion-tomato preparation.
Ingredients
Equipment: Wide pan
- 400g young pumpkin leaves and vine tips — washed and chopped
- 2 onions — diced
- 2 tomatoes — diced
- 2 garlic cloves — minced
- 2 tbsp oil
- 1 tsp salt
Method
- Strip off the outer fibrous skin from larger stems.
- Heat oil. Cook onions until golden.
- Add garlic. Stir 30 seconds.
- Add tomatoes. Cook 4 minutes.
- Add pumpkin leaves. Stir to combine.
- Cover and cook 5—7 minutes until wilted and tender.
- Season. Serve.
Chef Tips
- Strip fibrous skin from larger stems — otherwise stringy.
- Young tender leaves only.
Common Mistakes to Avoid
- Using mature leaves with fibrous stems.
The Science
Pumpkin leaves contain cucurbitacin — mildly bitter compounds present in higher concentrations in mature leaves. Young leaves have very low levels, making them pleasant to eat without any additional preparation.
