🌿 Tanzanian Sweet Potato Leaves
Matembele
Tanzanian Matembele — sweet potato vine tips sautéed with onions, tomatoes, and garlic. The tender, slightly sweet greens from the same plant that produces Tanzania's beloved sweet potato — another zero-waste Tanzanian vegetable.
Matembele (sweet potato leaves and vine tips) are harvested from the sweet potato plant while the tubers develop underground — providing a continuous supply of nutritious greens from a plant that also produces a significant root crop. The leaves are sweeter and more tender than most African greens.
Ingredients
Equipment: Wide pan
- 400g sweet potato vine tips and leaves — washed and chopped
- 2 onions — diced
- 2 tomatoes — diced
- 3 garlic cloves
- 2 tbsp oil
- 1 tsp salt
Method
- Heat oil. Cook onions until golden.
- Add garlic. Stir 30 seconds.
- Add tomatoes. Cook 4 minutes.
- Add matembele. Stir to combine.
- Cover and cook 5—6 minutes until completely wilted.
- Season. Serve.
Chef Tips
- Only the young tender vine tips — mature stems are stringy.
- Sweet potato leaves wilt faster than mchicha — check at 4 minutes.
Common Mistakes to Avoid
- Using mature stems — tough and stringy.
- Overcooking.
The Science
Sweet potato leaves have a higher beta-carotene content than the tubers themselves — the green colour from chlorophyll accompanies exceptionally high provitamin A levels.
