🥜 Tanzanian Peanut Vegetable Stew

Mboga ya Karanga

Tanzanian Mboga ya Karanga — mixed vegetables simmered in a rich peanut sauce with tomatoes and spices. The inland Tanzanian alternative to coconut-based vegetables — peanuts provide the richness and creaminess that coconut milk provides on the coast.

Peanut vegetable stew is the inland Tanzanian counterpart to the coastal coconut vegetable preparations — where the coast uses coconut milk for richness, the interior uses groundnuts. The result is a deeply satisfying, protein-enriched vegetable stew.

Ingredients

Equipment: Large pot

  • 2 medium sweet potatoes — peeled and cubed
  • 200g green beans — cut in half
  • 2 medium carrots — sliced
  • 2 cups cabbage — roughly chopped
  • 4 tbsp groundnut paste (peanut butter)
  • 2 onions — diced
  • 3 tomatoes — diced
  • 3 garlic cloves
  • 2 tbsp oil
  • 1 tsp curry powder
  • 1 tsp paprika
  • 2 tsp salt
  • 2 cups water
  • ¼ cup coriander

Method

  1. Heat oil. Cook onions until golden.
  2. Add garlic, curry powder, paprika, and tomatoes. Cook 6 minutes.
  3. Add sweet potato and carrot. Stir to coat.
  4. Add 1.5 cups water. Cover and simmer 10 minutes.
  5. Add green beans and cabbage. Simmer 8 more minutes.
  6. Mix peanut butter with ½ cup warm water. Add to pot.
  7. Simmer 5 minutes until sauce is thick and creamy.
  8. Garnish with coriander.

Chef Tips

  • Mix peanut paste with warm water first — prevents lumping.
  • Add harder vegetables first, softer ones later.
  • The peanut sauce thickens significantly — add a little water if too thick.

Common Mistakes to Avoid

  • Adding dry peanut paste directly.
  • Adding all vegetables at once — different cooking times.

The Science

The peanut butter contains naturally occurring emulsifiers (lecithin) that allow the fat and water to form a stable sauce without separating — producing a naturally creamy, smooth consistency without dairy.
