Sukuma Wiki (literally 'push the week' in Swahili — a reference to its role in stretching the week's budget) is the everyday green of Tanzania, as it is of Kenya. The Tanzanian preparation is virtually identical — simple, fast, and deeply satisfying alongside ugali.
Ingredients
Equipment: Large wide pan
- 500g sukuma wiki (collard greens) — washed, stems removed, thinly sliced
- 2 onions — diced
- 2 medium tomatoes — diced
- 3 garlic cloves — minced
- 2 tbsp vegetable oil
- 1 tsp salt
Method
- Heat oil over medium heat.
- Cook onions until softened — 5 minutes.
- Add garlic. Stir 30 seconds.
- Add tomatoes. Cook 3 minutes.
- Add sukuma wiki. Stir to combine.
- Cover and cook 5—7 minutes until wilted and tender.
- Season. Serve.

- Slice very thinly — thinner slices cook more evenly.
- Remove the tough central stem.
- Do not add water — the leaves release sufficient moisture.
