🍌 Tanzanian Banana Flower Curry

Tanzanian Banana Flower Curry — the inner petals of the banana flower (inflorescence) cooked in a spiced tomato sauce. A traditional dish of Tanzania's banana-growing highland regions — zero-waste cooking at its most creative.
Banana flower curry is one of Tanzania's most creative zero-waste dishes — the large purple flower at the end of a banana bunch, which falls off as the bananas mature, is harvested and cooked as a vegetable. Its tender inner petals have a mild, artichoke-like flavour.
Ingredients
Equipment: Large bowl with acidulated water, Large pot
- 1 fresh banana flower — outer purple petals removed, inner pale yellow flower prepared
- 2 onions — diced
- 3 tomatoes — diced
- 3 garlic cloves
- 1 tbsp ginger
- 200ml coconut milk
- 2 tbsp oil
- 1 tsp curry powder
- 1 tsp turmeric
- 1 tsp cumin
- 2 tsp salt
- 1 tbsp lemon juice
- ¼ cup coriander
Method
- Prepare banana flower: remove outer purple petals until you reach the pale inner florets. Chop finely. Immediately submerge in water with lemon juice — prevents browning.
- Blanch chopped flower in boiling salted water 5 minutes. Drain.
- Heat oil. Cook onions until golden.
- Add garlic, ginger, spices, tomatoes. Cook 6 minutes.
- Add blanched banana flower. Stir to combine.
- Add coconut milk. Simmer 15—18 minutes until tender.
- Garnish with coriander.
Chef Tips
- Work quickly and submerge in acidulated water immediately — banana flower browns on contact with air.
- Blanching removes initial bitterness.
- The inner pale florets are the vegetable — the outer purple leaves are discarded.
Common Mistakes to Avoid
- Not using acidulated water — immediate browning.
- Using outer purple petals — bitter and tough.
The Science
Banana flower contains polyphenol oxidase — the same enzyme that causes apple and banana browning when cut. Lemon juice's citric acid inhibits this enzyme through pH reduction, preventing browning.
