Chickpeas arrived on the Tanzanian coast through Indian Ocean trade and have become a beloved part of coastal Tanzanian cooking. The Zanzibar spice treatment gives chickpea curry a depth and fragrance that matches any meat dish.

Ingredients

Equipment: Large pot

  • 400g cooked or canned chickpeas
  • 2 onions — diced
  • 3 tomatoes — diced
  • 4 garlic cloves
  • 1 tbsp ginger
  • 200ml coconut milk
  • 3 tbsp oil
  • 2 tsp curry powder
  • 1 tsp cumin
  • 1 tsp turmeric
  • 1 tsp paprika
  • 1 tsp garam masala
  • 2 tsp salt
  • ¼ cup coriander
  • 1 tbsp lemon juice

Method

  1. Heat oil. Cook onions until golden.
  2. Add garlic, ginger, and all spices. Stir 1 minute.
  3. Add tomatoes. Cook 8 minutes until very thick.
  4. Add chickpeas. Stir to coat in the base.
  5. Add coconut milk. Simmer gently 15 minutes.
  6. Mash a few chickpeas against the side of the pan to thicken naturally.
  7. Add lemon juice and coriander.
