🍚 Zanzibar Pilau
Pilau ya Zanzibar
Zanzibar Pilau — the island's signature spiced rice dish. Beef slow-cooked with the most generous Zanzibar spice blend in East Africa — locally grown cloves, cinnamon, cardamom, and cumin — the cooking broth used to steam basmati rice to golden perfection.
Zanzibar pilau is the most fragrant rice dish in East Africa — the island where the world's finest cloves, cinnamon, and cardamom are grown produces a pilau that no other place can replicate. The spices are used in quantities that would seem excessive anywhere else; in Zanzibar they are exactly right.
Ingredients
Equipment: Large heavy sufuria, Spice grinder, Heavy lid and cloth
- 800g beef — cubed
- 4 cups basmati rice — soaked
- 3 large onions — thinly sliced
- 5 tomatoes — diced
- 6 garlic cloves
- 2 tbsp ginger
- 5 tbsp oil
- 8 cups beef stock or water
- 2 tsp salt
- ½ cup coriander
Zanzibar Spice Blend (toast and grind half, keep half whole)
- 3 tsp cumin seeds
- 12 cardamom pods
- 3 cinnamon sticks
- 12 whole cloves
- 2 tsp black peppercorns
- 3 star anise
- 2 tsp coriander seeds
- 1 nutmeg — grated
Method
- Toast all spices very deeply — 4 minutes. Grind half to a powder. Keep half whole.
- Brown beef in batches in hot oil. Remove.
- Cook onions until very deeply golden — 15 minutes.
- Add garlic, ginger, ground and whole spices. Stir 2 minutes.
- Add tomatoes. Cook 12 minutes until completely reduced and dark.
- Return beef. Add stock. Simmer covered 50—55 minutes until very tender.
- Remove beef. Measure broth — you need exactly 7 cups. Adjust.
- Add drained rice to broth. Bring to a boil.
- Place beef back on top of rice.
- Cover with a cloth then the lid. Lowest heat for 22 minutes.
- Rest 15 minutes. Serve beef atop the fragrant golden rice.

- Zanzibar cloves have the highest eugenol content in the world — use them generously.
- The nutmeg is a Zanzibar signature — do not omit.
- The cloth under the lid absorbs excess steam — the wedding cook's most important trick.
- Measuring the broth precisely ensures perfectly cooked rice.

The Science
Nutmeg contains myristicin and elemicin — aromatic compounds that survive cooking partially and add a distinctive warm, slightly sweet note to the pilau that no other spice provides. It is the secret note in Zanzibar pilau.
