The Zanzibar Mix is not a single dish — it is the Forodhani Gardens experience assembled on one plate. Each evening at the night market, visitors navigate between dozens of vendors, each specialising in one item. The Zanzibar Mix is the tourist and local shorthand for getting everything at once — a taste of every vendor's speciality.

Ingredients

Equipment: Charcoal grill, Deep frying pan, Large serving platters

    Assemble from individual recipes

    • 4 mishkaki pieces — grilled beef skewers
    • 4 bhajias — potato fritters
    • 2 portions urojo soup
    • 100g cassava chips — deep fried from TZA010
    • 4 large prawns — grilled with garlic butter
    • 100g grilled squid

    Sauces and accompaniments

    • Pili pili sauce
    • Chatni ya Nazi
    • Fresh lime and coriander
    • Cold sugarcane juice or tamarind drink

    Method

    1. Prepare each component from its individual recipe.
    2. Stage the cooking: start with mishkaki over charcoal (longest).
    3. Fry bhajias and cassava chips while mishkaki grills.
    4. Cook prawns and squid last — they take under 5 minutes.
    5. Warm urojo soup.
    6. Arrange all components on a large platter or in individual bowls.
    7. Serve with all sauces and fresh lime.
    8. Everything must be hot — serve immediately.

    Chef Tips

    • Staging is everything — the fastest-cooking items (squid, prawns) go on last.
    • Every component must be hot when served.
    • The cold drink is as important as the food — sugarcane juice or tamarind water.

    Common Mistakes to Avoid

    • Cold components — everything must arrive hot.
    • Poor staging — some items ready before others.
