Bhajia (from the Indian bhaji tradition, transformed on the Zanzibar coast) are one of the most beloved Zanzibar snacks — thin potato slices in a crispy, aromatic chickpea batter. The chickpea batter is much crunchier than wheat flour and the Zanzibar spicing makes these completely distinctive.

Ingredients

Equipment: Mandoline or sharp knife for thin slicing, Deep frying pan, Paper towels

  • 4 large potatoes — peeled and sliced very thinly (2—3mm)

Chickpea Batter

  • 1 cup chickpea flour (besan)
  • ½ cup water
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tsp turmeric
  • 1 tsp chilli powder
  • 1 tsp salt
  • 2 tbsp fresh coriander — finely chopped
  • 1 green chilli — finely minced
  • Oil for deep frying

Method

  1. Slice potatoes very thinly — 2—3mm. Pat completely dry.
  2. Whisk chickpea flour with water and all spices until smooth batter.
  3. Add fresh coriander and green chilli. Mix.
  4. Dip potato slices in batter to coat thinly.
  5. Heat oil to 175°C.
  6. Fry in batches — do not overlap — for 3—4 minutes until golden and crispy.
  7. Drain on paper towels.
  8. Serve immediately with coconut chutney.
