Mishkaki ya Zanzibar
Zanzibar Mishkaki — beef skewers marinated in the full Zanzibar spice palette including cloves, cardamom, and cinnamon, grilled over charcoal. More elaborately spiced than mainland mishkaki, they carry the full aromatic complexity of the island's spice heritage.
Zanzibar mishkaki are distinguished from mainland mishkaki by the more elaborate spice marinade — the island's position as the spice capital of the world means cloves, cardamom, and cinnamon go into the marinade that on the mainland would be a simple garlic-lemon-cumin combination.
Ingredients
Equipment: Skewers, Charcoal grill
- 600g beef sirloin — cubed
- 4 garlic cloves — minced
- 1 tbsp ginger
- 2 tbsp lemon juice
- 2 tbsp oil
- 1 tsp cumin
- 1 tsp coriander
- 1 tsp paprika
- ½ tsp ground cloves
- ½ tsp ground cardamom
- ¼ tsp ground cinnamon
- 1 tsp turmeric
- 2 tsp salt
Method
- Mix all marinade ingredients. Toss beef cubes to coat thoroughly.
- Marinate 4 hours minimum — overnight produces best results.
- Thread onto skewers — 5—6 cubes per skewer.
- Grill over medium-high charcoal 3—4 minutes per side.
- Serve immediately with kachumbari and pili pili.
Chef Tips
- The clove and cardamom in the marinade is what makes this Zanzibari.
- Do not marinate beyond 6 hours — the acids toughen the meat.

- Under-marinating.
- Over-marinating — acid denatures too much protein.
