Zanzibar is the birthplace of vitumbua — the most ancient Swahili coastal breakfast food. Made from fermented rice flour and fresh coconut milk, cooked in the special cast iron pan with rounded wells, they are simultaneously crispy and soft, slightly sour from fermentation, and unmistakably fragrant. No other version made anywhere else can match the Zanzibar original.

Ingredients

Equipment: Vitumbua pan (aebleskiver or special round pan), Small ladle, Skewer or chopstick for flipping

  • 2 cups rice flour
  • 250ml fresh thick coconut milk
  • ¾ cup warm water
  • 2 tbsp sugar
  • 1 tsp active dry yeast
  • ½ tsp ground cardamom
  • Pinch of salt
  • Coconut oil for greasing

Method

  1. Dissolve yeast and sugar in warm water. Rest 10 minutes until foamy.
  2. Combine rice flour, cardamom, and salt in a bowl.
  3. Add yeast mixture and fresh coconut milk. Whisk until completely smooth — no lumps.
  4. Cover with a cloth. Ferment overnight (8—10 hours minimum).
  5. Heat vitumbua pan over medium heat. Brush each well with coconut oil.
  6. Pour batter into each well — fill ¾ full.
  7. Cook 2—3 minutes until bubbles appear on the surface and edges set.
  8. Use a skewer to flip each vitumbua carefully.
  9. Cook other side 2 minutes until golden.
  10. Serve warm.

  • Fresh coconut milk from Zanzibar coconuts is non-negotiable for authentic vitumbua.
  • The overnight fermentation is what produces the characteristic slight tanginess.
  • Medium heat only — too hot burns outside before inside cooks through.
