Tanzanian Zanzibar Pizza — thin wheat dough rolled out, filled with spiced minced beef, egg, onion, and coriander, folded into a parcel and pan-fried until golden and crispy. Nothing to do with Italian pizza — Zanzibar's own remarkable street food invention.
Zanzibar Pizza is one of the most creative street food inventions in East Africa — thin dough filled with spiced meat, egg, and vegetables, folded into a parcel and fried in a skillet with a little oil. It has nothing to do with Italian pizza beyond the name; it is entirely Zanzibari. The vendors at Forodhani assemble them to order, pressing the filled dough flat in the pan.
Ingredients
Equipment: Large flat pan or skillet
Dough
- 2 cups flour
- ½ tsp salt
- ¾ cup warm water
- 1 tbsp oil
Filling (per pizza)
- 80g minced beef — seasoned
- 1 egg
- ¼ onion — finely diced
- 1 tbsp fresh coriander
- 1 green chilli — minced
- 1 tbsp mayonnaise
- 1 tsp curry powder
- Salt and pepper
- 2 tbsp oil for frying
Method
- Make dough: combine flour, salt, water, oil. Knead 5 minutes. Rest 20 minutes.
- Divide into balls. Roll each very thin — almost translucent.
- Season minced beef with curry powder, salt, and pepper.
- Spread minced beef across half the dough. Add onion and coriander.
- Break an egg over the filling. Add a drizzle of mayonnaise and chilli.
- Fold dough over to enclose the filling — press edges to seal.
- Heat oil in a flat pan over medium heat.
- Cook 3—4 minutes per side, pressing flat, until golden and crispy.
- Cut into quarters. Serve immediately.
Chef Tips
- The dough must be rolled very thin — thick dough = doughy result.
- Press firmly in the pan — this is not a gentle operation.
- The egg inside is what makes it special — it cooks inside the parcel.
Common Mistakes to Avoid
- Thick dough.
- Not pressing firmly.
- Overcrowded filling — leaks.
The Science
The egg inside the sealed dough parcel poaches in its own steam as the dough fries — reaching a soft-set consistency while the dough outside simultaneously crisps through Maillard browning. The sealing prevents steam from escaping, creating a self-basting internal environment.
