Pilau masala is the heart of Swahili coastal cooking — the blend that gives pilau its character. Made in large batches and stored, it is used in everything from rice to meat stews across the Tanzanian coast.

Ingredients

Equipment: Dry pan, Spice grinder or mortar

  • 3 tbsp black peppercorns
  • 3 tbsp cumin seeds
  • 2 tbsp coriander seeds
  • 2 tbsp cardamom pods
  • 2 cinnamon sticks
  • 2 tbsp whole cloves
  • 1 nutmeg — roughly broken
  • 1 tbsp star anise

Method

  1. Toast all spices in a dry pan over medium heat 3—4 minutes until very fragrant.
  2. Cool completely.
  3. Grind to a fine powder in a spice grinder.
  4. Store in an airtight jar.

Chef Tips

  • Toast until smoking slightly and very aromatic — do not under-toast.
  • Cool before grinding — grinding hot spices releases too much oil.
  • Store away from heat and light.
