Sugarcane juice is the universal Tanzanian street drink — present at every market, every bus station, every beach. In Zanzibar, the pressed juice is sometimes served with ginger and lime, making it one of the most refreshing drinks in East Africa.
Ingredients
Equipment: Sugarcane press or heavy knife and blender
- 6—8 sticks fresh sugarcane — peeled and cut
- 1 lime — juice
- ½ tsp fresh ginger — grated
- Ice
Method
- If using a press: feed cane through the press. Collect juice.
- If using a blender: chop cane finely, blend with a little water, strain through a cloth.
- Add lime juice and ginger.
- Serve immediately over ice.

- Sugarcane juice oxidises quickly — drink within 30 minutes.
- Lime and ginger are the Zanzibari additions.

The Science
