Coastal Prawn Biryani — a magnificent seafood biryani with prawn shell stock-cooked rice, large sautéed prawns, fried onions, saffron, and the full Zanzibar spice array, sealed dum-style. The grandest seafood celebration rice of the Swahili coast.
Prawn biryani is the Swahili coast's grandest seafood celebration — the technique of biryani applied to the Indian Ocean's finest prawn. The prawn shell stock gives the rice an extraordinary depth, and the dum sealing creates a fragrance that announces a great occasion.
Ingredients
Equipment: Large dum pot, Foil seal, Heat diffuser
- 600g large prawns — peeled, shells reserved
- 4 cups basmati rice — parboiled 70%
- 2 onions — fried deep golden
- ½ tsp saffron in warm water
- 3 tbsp ghee
- ¼ cup coriander
Prawn Marinade
- 1 cup yogurt
- 4 garlic cloves
- 1 tbsp ginger
- 2 tsp garam masala
- 1 tsp turmeric
- 1 tsp paprika
- 2 tsp salt
Prawn Stock: shells + 4 cups water + 1 onion + 2 garlic + 1 tsp salt
Method
- Marinate prawns in yogurt-spice mixture 30 minutes.
- Make prawn stock: simmer shells in water with onion and garlic 20 minutes. Strain.
- Parboil rice in prawn stock to 70%.
- Sauté marinated prawns in ghee 3—4 minutes. Set aside.
- Layer: half rice, half fried onions, sautéed prawns, remaining rice, saffron water, remaining ghee, remaining onions.
- Seal with foil. Dum over lowest heat 20 minutes.
- Break seal at table. Garnish with coriander.
Chef Tips
- The prawn stock is liquid gold — do not skip.
- Prawns are pre-cooked — they only need 3—4 minutes. Do not dum raw prawns.
- Break the seal at the table for the fragrance ceremony.

- Undercooking prawns before the dum.
- Discarding prawn shells.
