Muhogo wa Kuchoma
Tanzanian Muhogo wa Kuchoma — cassava peeled and roasted over charcoal until the exterior is lightly charred and the interior is soft, creamy, and slightly smoky. Eaten with chilli and lime — the simplest and most honest Tanzanian street food.
Roasted cassava is the most honest street food in Tanzania — the cassava vendor, the charcoal jiko, the cassava roasting until the exterior chars. Eaten with chilli salt and lime, it is the most direct expression of East African food culture.
Ingredients
Equipment: Charcoal jiko or grill
- 1 large cassava root — peeled and cut into sections
- Chilli powder
- Coarse salt
- Lime wedges
Method
- Peel cassava and cut into 10cm sections.
- Roast over charcoal coals 25—30 minutes, turning regularly.
- The exterior should be lightly charred in places; interior creamy when pierced.
- Sprinkle with chilli and salt.
- Serve with lime wedges.
Chef Tips
- Medium coals — slow roasting produces the creamy interior.
- Test with a skewer — no resistance means done.
