This soup was inspired by Zanzibar's famous spice tours — the tours of the island's spice farms where visitors discover cloves, cinnamon, cardamom, nutmeg, lemon grass, and more growing in profusion. The soup attempts to capture all of them in one bowl.
Ingredients
Equipment: Large pot, Blender (optional)
- 4 cups vegetable stock
- 400ml coconut milk
- 2 sweet potatoes — cubed
- 2 carrots — sliced
- 1 stalk lemon grass — bruised
- 3 cardamom pods
- 1 cinnamon stick
- 3 cloves
- 1 tsp cumin seeds
- 1 tsp turmeric
- 3 garlic cloves
- 2 tbsp ginger
- 1 onion — diced
- 2 tbsp oil
- 2 tsp salt
- ¼ cup fresh coriander
- Lime wedges
Method
- Heat oil. Cook onion until golden.
- Add garlic, ginger, and all whole spices and turmeric. Stir 1—2 minutes.
- Add sweet potato, carrot, and stock.
- Simmer 20—25 minutes until vegetables are tender.
- Remove whole spices and lemon grass.
- Blend half the soup smooth. Return to pot.
- Add coconut milk. Simmer gently 8 minutes.
- Season. Garnish with coriander. Serve with lime.

- Remove whole spices before blending.
- Partial blending — some texture is important.
