Zanzibar Spiced Plantain — ripe plantains pan-fried in coconut oil with cardamom, cinnamon, and honey until caramelised and golden. The sweetest Zanzibar breakfast — simple, fragrant, and deeply satisfying.
Spiced fried plantain is the sweet breakfast of Zanzibar — when the plantains are fully ripe (almost black skin), pan-fried with Zanzibar cardamom and cinnamon, and drizzled with honey, they become something extraordinary.
Ingredients
Equipment: Wide pan
- 3 very ripe plantains — peeled and sliced diagonally
- 2 tbsp coconut oil
- 1 tsp ground cardamom
- ½ tsp ground cinnamon
- 1 tbsp honey
- Pinch of salt
Method
- Heat coconut oil over medium heat.
- Add plantain slices in a single layer.
- Fry 3—4 minutes until golden underneath.
- Flip. Sprinkle cardamom and cinnamon over.
- Fry 3 more minutes.
- Drizzle honey over in the last 30 seconds.
- Serve immediately.
Chef Tips
- Very ripe plantains — almost black skin. They caramelise far better.
- The honey goes on at the very end — it burns if added too early.

- Under-ripe plantains — starchy not sweet.
- Adding honey too early.
The Science
Very ripe plantains have converted most of their starch to natural sugars (glucose and fructose). These sugars caramelise rapidly in the pan, producing the characteristic golden-brown exterior and deep sweetness that starchy under-ripe plantains cannot achieve.
