Ingredients
Equipment: Wide pan or griddle
- 1.5 cups all-purpose flour
- 2 tsp baking powder
- 1 tbsp sugar
- ½ tsp ground cardamom
- ¼ tsp salt
- 250ml coconut milk
- 1 egg
- 1 tbsp butter — melted
Serve with: fresh mango, pineapple, banana, honey
Method
- Mix flour, baking powder, sugar, cardamom, and salt.
- Whisk coconut milk, egg, and melted butter.
- Combine wet and dry. Mix until just combined — lumps are fine.
- Rest 5 minutes.
- Cook in a lightly buttered pan over medium heat: 2—3 minutes per side.
- Serve with fresh tropical fruit and honey.
