Coconut ice cream is Zanzibar's modern celebration dessert — completely dairy-free, made from the island's own coconut milk, fragrant with cardamom, and often studded with pieces of fresh coconut. At Forodhani, it is scooped from large freezer bowls by vendors who have been making it the same way for decades.
Ingredients
Equipment: Ice cream machine or loaf tin for no-churn method
- 800ml thick coconut milk (from 2 cans or fresh)
- ¾ cup sugar
- ½ tsp ground cardamom
- 1 tsp vanilla extract
- Zest of 1 lime
- Pinch of salt
Optional: ½ cup fresh grated coconut mixed in
Method
- Whisk coconut milk, sugar, cardamom, vanilla, lime zest, and salt until sugar dissolves.
- Churn method: pour into ice cream machine. Churn 20—25 minutes. Freeze 4 hours.
- No-churn method: whip in a cold bowl for 3 minutes. Freeze 1 hour. Whip again. Repeat 3 times. Freeze solid.
- Serve in small bowls or cones. Garnish with toasted coconut.
