Muhogo Chips
Tanzanian Muhogo Chips — cassava cut into thick chips and deep-fried until golden and crispy, served with pili pili and lime. The coastal alternative to potato chips — denser, chewier, and with a more complex starchy flavour. Found at every beach and street market on the Tanzanian coast.
Muhogo chips are the coastal Tanzanian alternative to potato chips — thick-cut cassava pieces deep-fried until the outside is crispy and golden and the inside is dense, starchy, and slightly chewy. They are served at every coastal food stall and are the default snack of the Tanzanian coast.
Ingredients
Equipment: Large pot for boiling, Deep frying pan
- 600g cassava — peeled and cut into thick rectangular chips
- 1 tsp salt
- Oil for deep frying
- Pili Pili and lime wedges to serve
Method
- Peel cassava. Cut into 8—10cm rectangular chips.
- Boil cassava chips in salted water for 12—15 minutes until just tender but not falling apart. Drain.
- Pat completely dry.
- Heat oil to 180°C.
- Fry in batches for 6—8 minutes until golden and crispy on the outside.
- Drain. Season with salt.
- Serve with pili pili and lime.
Chef Tips
- Pre-boiling is essential — raw cassava fries poorly and unevenly.
- Pat completely dry after boiling — moisture causes dangerous oil splatter.
- They need longer in the oil than potato chips — cassava is denser.

- Skipping the boil — raw cassava fries unevenly.
- Wet cassava — oil splatter danger.
The Science
Unlike potatoes, cassava contains very little pectin — its cell walls are held together primarily by starch. Pre-boiling gelatinises this starch, creating a stable interior structure. Without pre-boiling, the raw starch produces a dense, gummy interior even after extended frying.

Storage: Best eaten immediately.
Reheating: Briefly in hot oven at 200°C.
