Roasted groundnuts are the universal Tanzanian snack — the newspaper cone of warm peanuts sold at every junction, bus station, and market across the country. In Tanzania they are roasted in large dry pans over charcoal by vendors who know exactly when the nut is perfect — by sound (the rattling changes), by smell (the raw starch smell converts to the toasted nutty aroma), and by feel.

Ingredients

Equipment: Large dry frying pan or wok, Or: charcoal jiko with heavy pan

  • 500g raw groundnuts (peanuts) — in shells or shelled
  • 1 tsp coarse salt

Method

  1. Place raw groundnuts in a completely dry pan over medium heat.
  2. Roast, stirring constantly, for 15—20 minutes.
  3. The shells (if on) will darken; the nuts will become fragrant and begin to rattle differently.
  4. Test one — it should be fully cooked, crunchy, and deeply nutty throughout.
  5. Remove from heat. Toss with coarse salt.
  6. Cool before serving — they continue cooking for 2—3 minutes off the heat.

Chef Tips

  • Stir constantly — groundnuts burn quickly once they start.
  • Remove from heat just before they seem done — carryover cooking finishes them.
  • The smell tells you — once the raw starch smell is gone and the roasted aroma appears, they are nearly ready.

Common Mistakes to Avoid

  • Not stirring — uneven roasting and burning.
  • Over-roasting — bitter result.

The Science

Groundnut roasting involves Maillard reactions between the proteins and naturally occurring sugars in the nut — producing hundreds of flavour compounds including pyrazines (roasted, nutty notes), furans (caramel notes), and thiophenes (savoury notes). The characteristic 'roasted peanut' smell is primarily 2-acetylpyridine and 2-acetyl-1-pyrroline.
