Ingredients

  • 4 large potatoes — peeled and cut into thick chips
  • Oil for deep frying

Chipsi Masala Spice Mix

  • 1 tsp curry powder
  • 1 tsp paprika
  • ½ tsp cumin
  • ½ tsp garlic powder
  • ½ tsp turmeric
  • 1 tsp salt
  • ¼ tsp black pepper

    Method

    1. Cut potatoes into chunky chips. Soak in cold water 20 minutes. Dry thoroughly.

    4. Raise oil to 185°C. Second fry chips 3—4 minutes until deeply golden and crispy.
    5. Drain immediately.
    6. While piping hot, toss chips vigorously in a large bowl with the masala spice mix.
