Ingredients

Equipment: Deep frying pan for chips, Heavy 24cm frying pan (the chips mayai pan), Plate or lid for flipping

  • 3 large potatoes — peeled, cut into thick chips
  • 4 large eggs
  • 1 medium onion — thinly sliced
  • 1 medium tomato — diced
  • 1 green chilli — sliced
  • 2 tbsp fresh coriander
  • ½ tsp curry powder
  • ½ tsp turmeric
  • 1 tsp salt
  • Oil for deep frying the chips
  • 2 tbsp oil for the pan

To serve: tomato ketchup, pili pili (TZA117)

    Method

    1. Fry chips in deep oil at 175°C until golden and cooked through — 8—10 minutes. Drain on paper towels.
    2. Beat eggs with curry powder, turmeric, salt, and a splash of water.
    3. Heat 2 tbsp oil in a heavy frying pan over medium heat.
    4. Add onion and chilli. Fry 2 minutes.
    5. Add fried chips. Spread evenly across the pan.
    6. Pour beaten egg mixture evenly over the chips.
    7. Add diced tomato and coriander on top.
    8. Press down firmly with a spatula.
    9. Cover and cook over medium-low heat for 5—7 minutes until egg is fully set.
    10. Slide onto a plate — or flip for a crispy top — cut into wedges.
    11. Serve with tomato ketchup and pili pili.
