Mishkaki ya Mtaani
Tanzanian Street Mishkaki — the roadside beef skewers that light up every Tanzanian evening. Beef cubes marinated simply in garlic, lemon, and cumin, grilled over charcoal jikos until lightly charred. Sold by weight, eaten standing, the defining evening street food.
Street mishkaki is the evening ritual of every Tanzanian city — the glowing charcoal jikos appearing at dusk, the smell of spiced beef drifting through the streets, the vendors expertly turning skewers in the firelight. This is the simplest possible version — the street version — where the marinade is minimal and the charcoal does all the work.
Ingredients
Equipment: Charcoal jiko, Metal skewers, Tongs
- 600g beef — sirloin or rump, cubed 3cm
- 3 garlic cloves — minced
- 2 tbsp lemon juice
- 1 tbsp vegetable oil
- 1 tsp cumin
- 1 tsp salt
- ½ tsp black pepper
Serve with
- Chipsi (chips)
- Chapati
- Kachumbari
- Pili Pili
Method
- Cube beef uniformly at 3cm.
- Mix garlic, lemon, oil, cumin, salt, pepper. Toss beef to coat.
- Marinate minimum 1 hour — refrigerated.
- Thread onto skewers — 5—6 cubes each.
- Grill over medium-high charcoal coals 3—4 minutes per side.
- Char lightly — the char is the flavour.
- Serve by weight with the customer's choice of accompaniments.
Chef Tips
- Uniform cubes cook evenly — take the time to cut carefully.
- Medium-high heat for mishkaki — hotter than nyama choma because the pieces are small.
- The char is essential — pale mishkaki is under-cooked.

- Uneven cubes.
- Too low heat — no char.
