Tanzanian Kachori — crispy, slightly puffed round pastries filled with spiced lentils or peas, deep-fried until golden. The Indian Ocean's contribution to Tanzania's street food — a round, satisfying pastry that appears in the urojo bowl and at every Zanzibar market.
Kachori arrived on the Tanzanian coast through the Indian Ocean trade and became a permanent part of Zanzibar's street food landscape — the round, crispy pastry filled with spiced dal that appears in the urojo bowl and is sold independently at every market.
Ingredients
Equipment: Rolling pin, Deep frying pan
Pastry
- 2 cups all-purpose flour
- 2 tbsp oil
- ½ tsp salt
- ½ cup water
Lentil Filling
- 1 cup yellow split peas or lentils — soaked and cooked
- 1 onion — finely diced
- 1 tsp cumin
- 1 tsp coriander
- 1 tsp turmeric
- 1 tsp chilli powder
- 1 tsp garam masala
- 2 tbsp coriander leaves
- 1 tsp salt
- 2 tbsp oil
- Oil for deep frying
Method
- Make filling: cook onion until golden. Add spices, cooked lentils. Mash partially. Add coriander. Cool completely.
- Make pastry: rub oil into flour and salt. Add water gradually to a stiff dough. Knead 5 minutes.
- Divide dough into 12 balls. Flatten each into a 8cm round.
- Place 1 tbsp filling in the centre. Gather edges and pinch firmly to seal.
- Flatten gently into a disc.
- Fry at 170°C for 4—5 minutes until golden and slightly puffed.
Chef Tips
- The seal must be completely airtight — any gap and the filling escapes into the oil.
- The stiff dough is intentional — it holds its shape during frying.
Common Mistakes to Avoid
- Poor seal — filling escapes.
- Too soft dough — collapses.
The Science
Kachori puffs during frying because the moisture in the filling converts to steam as the oil temperature rises. This steam, trapped by the sealed dough, creates internal pressure that puffs the pastry. The dough must be stiff enough to withstand this pressure without bursting.
