Street sambusa is one of Tanzania's most widely sold street foods — the 500-shilling snack that fuels the country between meals. The street version uses thinner, crispier pastry than the restaurant version and a more assertively spiced filling that holds up to the price point.

Ingredients

Equipment: Rolling pin, Deep frying pan, Small bowl for sealing paste

    Pastry (makes 24)

    • 2 cups plain flour
    • ½ tsp salt
    • 1 tbsp oil
    • ¾ cup water

    Beef Filling

    • 400g minced beef
    • 2 onions — finely diced
    • 4 garlic cloves
    • 1 tbsp ginger
    • 2 green chillies — minced
    • 3 tbsp fresh coriander
    • 1 tsp curry powder
    • 1 tsp cumin
    • ½ tsp turmeric
    • 1 tsp salt

    Sealing paste: 2 tbsp flour + 2 tbsp water

    • Oil for deep frying

    Method

    1. Make filling: fry onions, garlic, ginger, chilli. Add minced beef. Brown and break up. Add spices and coriander. Cook until completely dry. Cool.
    2. Make pastry: combine flour, salt, oil, water to a stiff dough. Knead 5 minutes. Rest 15 minutes.
    3. Roll very thin. Cut into 10cm circles or squares.
    4. Fold into a cone shape. Fill with a heaped teaspoon of filling.
    5. Seal the top with flour-water paste, pressing firmly.
    6. Heat oil to 175°C.
    7. Fry in batches of 6—8 for 4 minutes until deep golden.
    8. Drain on paper towels.
