🥟 Zanzibar Samosa
Sambusa ya Zanzibar
Zanzibar Sambusa — thin crispy pastry filled with spiced minced beef or vegetables, folded into triangles and deep-fried golden. The Zanzibari version of the samosa — thinner, crispier pastry and more elaborately spiced than the Indian original.
Zanzibar sambusa arrived through Indian Ocean trade routes and was transformed by the island's spice heritage. The pastry is thinner and crispier than Indian samosa, and the filling uses the full Zanzibar spice array. Sold at every market, eaten at every celebration.
Ingredients
Equipment: Rolling pin, Deep frying pan
Pastry
- 2 cups flour
- ½ tsp salt
- 1 tbsp oil
- ¾ cup warm water
Beef Filling
- 300g minced beef
- 1 onion — finely diced
- 3 garlic cloves — minced
- 1 tbsp ginger
- 1 green chilli
- 2 tbsp coriander
- 1 tsp curry powder
- ½ tsp ground cloves
- ½ tsp ground cardamom
- 1 tsp salt
- Oil for deep frying
Method
- Make pastry: combine flour, salt, oil, water. Knead 5 minutes. Rest 20 minutes.
- Cook filling: brown minced beef with onion, garlic, ginger, chilli, spices. Cook until dry. Add coriander. Cool.
- Roll pastry very thin. Cut into rectangles.
- Fold each rectangle into a cone. Fill with meat. Fold top to seal triangle.
- Seal edges with a paste of flour and water.
- Heat oil to 175°C.
- Fry in batches 3—4 minutes until golden and crispy.
- Serve with chatni ya Nazi and pili pili.
Chef Tips
- Paper-thin pastry is the key.
- Filling must be completely cool and dry before filling — moisture makes pastry soggy.
- Seal edges carefully — oil entering ruins them.
