Tanzanian Mkate wa Mviringo — a round bread ring coated in sesame seeds, lightly sweetened and baked until golden. The coastal Tanzanian bread ring sold at morning markets — the distant cousin of the Turkish simit, transformed by the Swahili coast.

Ingredients
Equipment: Baking sheet, Oven at 190°C
- 2 cups all-purpose flour
- 1 tsp yeast
- 1 tbsp sugar
- ½ tsp salt
- 1 tbsp oil
- ¾ cup warm water
- 4 tbsp sesame seeds — toasted
- 1 tbsp honey mixed with 1 tbsp water for glazing
Method
- Dissolve yeast and sugar in warm water. Rest 10 minutes.
- Mix flour and salt. Add yeast mixture and oil. Knead 8 minutes.
- Rest covered 1 hour until doubled.
- Divide into 8. Roll each into a rope. Form into a ring. Pinch ends.
- Dip in honey-water. Coat in sesame seeds.
- Place on baking sheet. Rest 15 minutes.
- Bake at 190°C for 18—20 minutes until golden.
