Tanzanian Mkate wa Sinia — a soft, sweet, enriched Swahili bread baked in a round tin, flavoured with cardamom, coconut milk, and sesame seeds on top. The festive Zanzibar bread that signals celebration — baked for Eid, weddings, and honoured guests.
Mkate wa Sinia (literally 'tray bread') is the festive bread of Zanzibar — round, soft, slightly sweet, fragrant with cardamom, and decorated with sesame seeds on top. It is baked for Eid morning, for weddings, and whenever guests important enough to receive the finest hospitality arrive.
Ingredients
Equipment: Round baking tin (24cm), Oven (180°C)
- 3 cups all-purpose flour
- 2 tsp active dry yeast
- 3 tbsp sugar
- 1 tsp ground cardamom
- ½ tsp salt
- 200ml warm coconut milk
- ½ cup warm water
- 2 eggs
- 3 tbsp butter — softened
Topping
- 1 egg — beaten
- 2 tbsp sesame seeds
Method
- Dissolve yeast and 1 tbsp sugar in warm water. Rest 10 minutes until foamy.
- Mix flour, remaining sugar, cardamom, and salt.
- Beat eggs into warm coconut milk. Add to dry ingredients with yeast.
- Knead 8—10 minutes until smooth and elastic.
- Add softened butter. Knead 3 more minutes.
- Cover and rest 90 minutes until doubled.
- Shape into a round and place in greased tin.
- Rest 30 minutes.
- Brush with beaten egg. Scatter sesame seeds.
- Bake at 180°C for 25—30 minutes until golden.

- The dough should be slightly soft and tacky — resist adding too much flour.
- The sesame seeds are the visual signature — be generous.
- Cool completely before slicing.

- Over-flouring — dense bread.
