Ingredients
Equipment: Sharp knife
- 1 whole firm mango — green or ripe
- Chilli powder
- Coarse salt
- Fresh lime
- 1 wooden skewer or stick
Method
- Peel the mango leaving it whole.
- Cut the flesh around the stone — make lengthways cuts then crossways cuts through the flesh, stopping just before the stone. This creates the hedgehog pattern.
- Alternatively: score into slabs parallel to the stone.
- Push a stick through the stone end.
- Sprinkle with chilli powder and salt.
- Squeeze lime over.
- Eat immediately.

- The hedgehog cut exposes maximum flesh surface for the chilli-lime seasoning.
- Green mango is sour and bold — more chilli; ripe mango is sweet — more lime.

The Science
Lime citric acid partially hydrolyses the mango's natural pectin — softening the surface texture slightly and brightening the flavour. The capsaicin from chilli simultaneously activates TRPV1 heat receptors, which in low concentrations increases sensitivity to other flavours — making the mango taste more intensely of itself.
