Tanzanian Kamba na Embe — chilled cooked prawns over sliced fresh mango with a lime-chilli-coriander dressing. A refreshing Zanzibar starter combining the island's finest prawn with extraordinary mango. Light, vibrant, completely tropical.
Prawn and mango is Zanzibar's most refreshing starter — the sweetness of fresh Zanzibari mango, the briny freshness of Indian Ocean prawns, and the lime-chilli dressing create a combination perfectly matched to the warm coastal climate.
Ingredients
Equipment: Bowl, Whisk
- 300g large cooked prawns — chilled
- 2 large ripe mangoes — peeled and sliced
- ¼ red onion — very thinly sliced
Lime-Chilli Dressing
- 3 tbsp lime juice
- 1 tbsp honey
- 1 red chilli — finely sliced
- 2 tbsp fresh coriander
- 1 tsp ginger — grated
- 2 tbsp olive oil
- ½ tsp salt
Method
- Whisk all dressing ingredients together.
- Arrange mango slices on plates.
- Top with chilled prawns and red onion.
- Drizzle dressing generously.
- Scatter coriander and chilli slices. Serve immediately.
