🫕 Tanzanian Maize Porridge Sweet

Tanzanian Sweet Uji — fine maize flour simmered in coconut milk with sugar, cardamom, and vanilla until silky smooth. The sweetened version of Tanzania's staple porridge — elevated with coconut milk and spice into a dessert that is as nourishing as it is comforting.
Sweetened uji with coconut milk is the dessert version of Tanzania's most fundamental food — when uji is made with coconut milk, sweetened generously, and perfumed with cardamom, it transcends its everyday role and becomes something genuinely special. Served at celebrations for children, as a dessert at coastal meals, and as a healing food for the sick.
Ingredients
Equipment: Medium saucepan, Whisk
- 1 cup fine maize flour (or millet flour)
- 400ml coconut milk
- 2 cups water
- 4 tbsp sugar
- ½ tsp ground cardamom
- ½ tsp vanilla extract
- Pinch of salt
Garnish: toasted coconut, a drizzle of honey
Method
- Whisk maize flour with 1 cup cold water until completely lump-free.
- Bring coconut milk and remaining water to a gentle simmer.
- Pour the flour mixture slowly into the simmering liquid, whisking constantly.
- Cook over medium heat, whisking frequently, for 15—18 minutes until thick and smooth.
- Add sugar, cardamom, vanilla, and salt. Stir.
- Simmer 3 more minutes.
- Serve warm or at room temperature, garnished with toasted coconut and honey.
Chef Tips
- Whisking the flour into cold water first prevents all lumps.
- Whisk constantly as it thickens — the base thickens fast and sticks easily.
- The consistency should be like a thick, pourable custard.

The Science
Maize starch gelatinises between 62—80°C — this is the temperature range during which the starch granules absorb water, swell, and burst, releasing amylose into the liquid and thickening it. The coconut milk fat coats the starch granules, producing a smoother, glossier, more tender result than water alone.
