🍪 Tanzanian Cardamom Biscuits

Tanzanian Biskuti ya Iliki — crisp, buttery cardamom biscuits perfumed with Zanzibar cardamom, lightly sweet and perfect with chai. The biscuit that accompanies every important conversation on the Swahili coast.
Cardamom biscuits are the biscuit of Zanzibar's tea culture — served with every cup of spiced tea at every gathering, these crisp, buttery, heavily cardamom-scented biscuits are the social lubricant of the coast. They should taste more of cardamom than anything else.
Ingredients
Equipment: Food processor or fingertips, Rolling pin, Biscuit cutter, Oven at 170°C
- 2 cups all-purpose flour
- ½ cup icing sugar
- 1.5 tsp ground cardamom
- ¼ tsp ground nutmeg
- ½ tsp salt
- 150g cold butter — cubed
- 1 egg yolk
- 2 tbsp cold water
Optional: sesame seeds for sprinkling
Method
- Combine flour, icing sugar, cardamom, nutmeg, and salt.
- Rub cold butter into flour until mixture resembles breadcrumbs.
- Add egg yolk and water. Mix until dough just comes together.
- Wrap and refrigerate 30 minutes.
- Roll to 5mm thickness. Cut into rounds or desired shapes.
- Place on parchment-lined baking sheet. Sprinkle with sesame seeds if using.
- Bake at 170°C for 16—18 minutes until pale golden.
- Cool completely on the tray.
Chef Tips
- Use generously more cardamom than feels necessary — these biscuits should be assertively spiced.
- Cold butter is essential for a crisp, short texture.
- Do not over-bake — pale golden is correct; deep golden means too hard.
Common Mistakes to Avoid
- Warm butter — produces a greasy, not crisp result.
- Over-baking.
- Insufficient cardamom.
The Science
The rubbing-in technique creates a 'short' pastry — the fat coats the flour particles, preventing gluten development. When baked, the fat melts and the biscuit shatters into the characteristic crisp, crumbly texture of a shortbread biscuit. Icing sugar (finer than caster) produces a smoother texture because it dissolves completely.
