Tanzania is one of the world's finest passion fruit producers — the highland altitude and rich volcanic soil produce passion fruits of exceptional fragrance and acidity. The juice made from these fruits needs minimal intervention: strain, dilute, sweeten lightly with honey, and serve cold. It is the finest fruit juice in East Africa.

Ingredients

Equipment: Sieve, Bowl, Pitcher

  • 16 ripe passion fruits
  • 4 cups cold water
  • 3 tbsp honey or sugar (to taste)
  • Pinch of salt
  • Ice cubes

Optional: a few passion fruit seeds left in for visual effect

    Method

    1. Halve passion fruits. Scoop pulp and seeds into a sieve over a bowl.
    2. Press through the sieve with the back of a spoon, extracting all the juice. Discard seeds.
    3. Add cold water, honey, and salt to the strained juice.
    4. Stir until honey dissolves.
    5. Taste — adjust sweetness. The juice should be tart and intensely fragrant.
    6. Serve over ice.

    • Press the sieve pulp hard — every drop of the juice remaining in the pulp is the most concentrated.
    • Honey complements passion fruit far better than sugar.
