Tanzanian Passion Fruit Curd — tart Tanzanian passion fruit cooked with eggs, sugar, and butter into a smooth, intensely flavoured, glossy curd. The most versatile Tanzanian dessert sauce — spread on cake, spooned over ice cream, stirred into yogurt, or eaten directly from the spoon.
Passion fruit curd is Tanzania's most intensely flavoured dessert sauce — the extraordinary tartness and fragrance of fresh Tanzanian passion fruit, cooked with eggs and butter into a smooth, glossy curd of remarkable depth. Made in 20 minutes, it keeps for 2 weeks, and makes everything it touches better.
Ingredients
Equipment: Heatproof bowl, Saucepan of simmering water, Fine sieve, Whisk
- 12 ripe passion fruits — juice and seeds strained (yields about ¾ cup juice)
- 3 large eggs
- 2 egg yolks
- ¾ cup sugar
- 80g cold butter — cubed
- Pinch of salt
Method
- Whisk eggs, yolks, and sugar in a heatproof bowl until pale.
- Add passion fruit juice and salt. Whisk to combine.
- Place bowl over a pan of gently simmering water — the bowl must not touch the water.
- Stir constantly with a wooden spoon for 12—15 minutes until the mixture thickens and coats the back of the spoon.
- Remove from heat. Add cold butter piece by piece, whisking after each piece until fully incorporated.
- Strain through a fine sieve.
- Pour into sterilised jars. Seal and refrigerate.
Chef Tips
- The double boiler prevents the eggs from scrambling — never use direct heat.
- The curd is ready when it holds a clear line on the back of the spoon.
- Cold butter whisked in at the end is what gives the curd its gloss and smooth texture.
Common Mistakes to Avoid
- Direct heat — eggs scramble.
- Not straining — seeds remain.
- Hot butter — breaks the emulsion.
The Science
Passion fruit curd is an emulsified egg-thickened sauce. The egg proteins coagulate over the double boiler (65—75°C), thickening the liquid. The cold butter is emulsified into the hot base — the butter fat droplets are suspended by the egg proteins, creating the characteristic glossy, smooth texture. This is the same principle as hollandaise sauce.
