🍓 Tanzanian Tropical Fruit Salad
Saladi ya Matunda ya Tropiki
Tanzanian Tropical Fruit Salad — fresh mango, pineapple, papaya, passion fruit, watermelon, and banana tossed in a lime-cardamom-honey dressing and scattered with fresh mint and toasted coconut. Zanzibar's extraordinary fruit abundance on a single plate.
Tanzania's tropical fruit salad is simply an assembly of what grows here — mango, pineapple, papaya, passion fruit, watermelon, coconut — each at peak ripeness, dressed lightly with lime, cardamom, and honey to unite them without masking their individual characters.
Ingredients
Equipment: Large serving bowl
- 1 large ripe mango — peeled and cubed
- ½ ripe pineapple — peeled, cored, and cubed
- 1 ripe papaya — peeled, seeded, and cubed
- 1 cup watermelon — cubed, seeds removed
- 2 ripe bananas — sliced
- 4 passion fruits — pulp scooped
Lime-Cardamom Dressing
- 3 tbsp fresh lime juice
- 2 tbsp honey
- ¼ tsp ground cardamom
- Pinch of salt
Garnish: ¼ cup fresh mint leaves, 3 tbsp toasted coconut flakes
Method
- Whisk lime juice, honey, cardamom, and salt until combined.
- Combine all prepared fruits in a large bowl.
- Pour dressing over and toss gently.
- Top with passion fruit pulp.
- Scatter fresh mint and toasted coconut.
- Serve immediately or chill for up to 30 minutes before serving.
Chef Tips
- All fruit must be at perfect ripeness — this dish is entirely about fruit quality.
- Dress just before serving — citrus juice draws moisture from the fruit over time.
- The cardamom is the Zanzibar signature — do not omit.
Common Mistakes to Avoid
- Under-ripe fruit — the entire dish suffers.
- Dressing too far ahead.
The Science
Each fruit in this salad contains different dominant acids — citric (pineapple, lime), malic (mango), tartaric (passion fruit). The lime dressing adds additional citric acid which brightens all the other fruits while the honey's fructose rounds any excessive tartness. Cardamom's 1,8-cineole is a volatile aromatic that pairs naturally with all tropical fruits.
