Tanzanian Mango Dessert — Zanzibar Dodo mangoes sliced and arranged with a coconut-lime cream, fresh mint, toasted coconut, and a drizzle of cardamom honey. Tanzania's finest fruit presented as a complete dessert — the simplest possible expression of what peak-season mango can be.
The mango dessert is a celebration of the Zanzibar Dodo mango in its perfect season — January to March, when the mangoes are at their sweetest and most fragrant. The coconut-lime cream and cardamom honey are complements, not competitors — they exist to highlight the mango, not to mask it.
Ingredients
Equipment: Electric whisk or hand whisk, Serving plates
- 3 large ripe Zanzibar Dodo mangoes (or best ripe mangoes available)
Coconut-Lime Cream
- 200ml coconut cream — chilled
- 2 tbsp icing sugar
- 1 tsp lime zest
- ½ tsp vanilla
Cardamom Honey Drizzle
- 3 tbsp honey
- ¼ tsp ground cardamom
Garnish: fresh mint leaves, toasted coconut flakes, lime wedge
Method
- Whip chilled coconut cream with icing sugar, lime zest, and vanilla until fluffy.
- Warm honey with cardamom for 30 seconds — stir to combine. Cool.
- Peel and slice mangoes — either fans, wedges, or cubes.
- Arrange mango artfully on plates.
- Add a generous spoonful of coconut-lime cream alongside.
- Drizzle cardamom honey over the mango.
- Scatter toasted coconut flakes and fresh mint.
- Serve immediately.

- The mango must be perfectly ripe — this dessert lives or dies by fruit quality.
- Chill the coconut cream overnight for it to whip properly.
