Tanzanian Dawa — the iconic East African honey-lime drink. Fresh lime juice, honey, crushed ice, and lime wedges muddled together with a honey stick. 'Dawa' means 'medicine' in Swahili — and this bright, refreshing, naturally sweet-sour drink feels like exactly that.
Dawa is the most famous East African non-alcoholic drink — beloved in Tanzania and Kenya equally. The combination of fresh lime juice, quality honey, and crushed ice is simple, elegant, and deeply refreshing. The honey stick (or spoon) used for muddling is traditionally left in the glass for the drinker to keep stirring as the honey dissolves throughout the drink.
Ingredients
Equipment: Glass, Honey stick or muddler, Citrus juicer
- 2 whole limes — 1 juiced, 1 cut into wedges
- 2 tbsp good honey
- 1 cup crushed ice
- 1 cup cold water or soda water
Non-alcoholic version (as here)
For adults: can substitute half the water with vodka for the classic Dawa cocktail
Method
- Fill a glass with crushed ice.
- Add lime wedges to the glass.
- Pour in fresh lime juice.
- Add honey directly over the ice.
- Add cold water or soda water.
- Stir with a honey stick or spoon, pressing the lime wedges as you stir.
- Leave the stirring stick in the glass — the drinker continues stirring as the honey dissolves.
Chef Tips
- Local Tanzanian honey is the best — floral, complex, and far superior to commercial honey.
- The honey stick left in the glass is part of the Dawa tradition — do not remove it.
- Soda water adds effervescence that makes it even more refreshing.

The Science
Honey does not dissolve instantaneously in cold water — its high viscosity means it stratifies to the bottom. Continual stirring (hence the stirring stick in the glass) gradually dissolves the honey upwards through the drink, creating a changing flavour profile as the drink is consumed — more tart at first, progressively sweeter.
